Dressing:
1 lemon
2 T. white wine vinegar
1/3 c. sugar
1 T. vegetable oil
1 tsp. poppy seeds
Salad:
1/4 c. sliced almonds
8 oz. fresh strawberries
1/2 medium cucumber
1/4 small red onion
1 pkg. baby spinach

Directions:
Directions:
Hull and quarter strawberries and slice cucumber and onion thin. Toast almonds at 350º for 8-10 minutes. For dressing--zest lemon to measure 1/2 tsp. Juice lemon to measure 2 T. Add all dressing ingredients together, whisk, cover, and refrigerate. Place spinach in large bowl, add strawberries, cucumber, and onion. Whisk dressing. Pour over salad. Gently toss and sprinkle with almonds. Serve immediately.
