2 lb small new potatoes
3 T butter
1 T oil
1/4 tsp. salt
pepper to taste
minced parsley

Directions:
Directions:
In large heavy skillet heat 2 tbs. butter and the oil until bubbly; add potatoes. Cook over medium high heat until lightly browned on all sides 8 to 10 minutes. Reduce heat to low, cover and cook 15 to 20 minutes or until potatoes are tender and well browned, shaking pan often. Discard pan drippings. Add remaining 1 tbs butter to pan; heat until bubbly. Pour over potatoes. Sprinkle with pepper and parsley.
