1 10. oz. package frozen chopped spinach, thawed and well-drained
1 c. flour
1 tsp. salt
1 tsp. baking powder
2 eggs, beaten
1 c. milk
3 T. butter, melted
16 oz. cheddar cheese, grated
1/2 c. minced onion, microwaved for 1 min.
3 T. pimento, chopped
1/4 tsp. black pepper
1/8 tsp. cayenne pepper

Preheat oven to 325 degrees F. Grease a 9 in. x 13 in. glass baking dish. Mix dry ingredients together in a large bowl. Gently stir in all other ingredients. Pour the mixture into the baking dish and bake uncovered for 45 minutes. Slice into squares for serving.
