1 large or 2 medium butternut squash
2 c. chicken broth
1 medium sweet onion
1 tsp. coriander
2 tsp. black pepper
1 tsp. salt
1/8 tsp. cayenne pepper
3 bay leaves
2 c. fat-free half and half
2 T. dry sherry
Toppings:
1 lb. smoked sausage
1 stalk green onions, chopped
2 apples
1/2 c. sour cream

Directions:
Directions:
Peel and slice butternut squash and onion, and place in a large saucepan along with 2 cups of chicken broth, all the seasonings, and the bay leaves. Cover and cook for 25 minutes, stirring frequently. Remove from heat and take out bay leaves.

Puree well with a hand blender, right in the pot. Add the fat-free half and half and the sherry. (Add more broth or half and half if a different consistency is desired.) Heat through, cover, and set aside.

To prepare toppings: Chop and pan-sautee the smoked sausage, chop the apples, and chop the green onions. Assemble all 4 toppings (including sour cream) in individual bowls. Serve soup, and let guests "top" their own soup bowls.
