4 or 5 large Idaho baking potatoes
1 bag Mexican blend shredded cheese
3 scallions, thinly sliced
1 lb. bacon
Blue cheese or Ranch dressing

Directions:
Directions:
Wash and slice potatoes into wedges. Arrange in baking dish. Salt and pepper and prebake at 350º for 20 minutes. While potatoes are baking, fry bacon until very crisp. Drain and cool. Remove potatoes and put on crumbled bacon, scallions, and cheese on top. Bake until done. Serve with dressing for dipping.
