1 1/2 cups couscous
1 T butter
1 1/2 cups water
1/4 cup plain yogurt
1/4 cup good olive oil
1 tsp white wine vinegar
1 tsp curry powder
1 tsp ground turmeric
1 1/2 tsp kosher salt
1 tsp freshly ground black pepper
1/2 cup grated carrots
1/2 cup minced parsley
1/2 cup dried currants (or raisins)
1/4 cup sliced almonds
2 green onions, thinly sliced
1/4 cup small diced red onion



Directions:
Directions:
Place couscous in a bowl. Melt butter in 1-1/2 cups boiling water. Pour over the couscous. Cover tightly, and allow the couscous to cook for 5 minutes. Fluff with a fork.

Whisk together: yogurt (whole milk), good olive oil, white wine vinegar, curry powder, ground turrmeric, kosher salt, freshly ground black pepper

Pour over the fluffed couscous and mix well with a fork.

Stir in: grated carrots, minced parsley, dried currants (or raisins), sliced almonds, green onions, thinly sliced (white AND green parts), small-diced red onion
