Veg oil
3 cup Shredded zucchini, drained
1/2 Cup shredded aged cheddar cheese
3 T. Snipped parsley
1 large clove garlic, finely chopped
1 egg beaten
1tsp salt
Dash pepper
1 cup bisquick

Directions:
Directions:
Heat ¼ inch oil in skillet until a little batter sizzles. Mix zucchini, cheese, parsley, egg and seasonings. Stir in Bisquick. Drop by rounded tablespoonsfuls into hot oil. Fry until really brown and crispy on both sides. Drain on paper towels.
Can substitute Shredded Carrots for zucchini.
