6oz Bacon (about 9 slices)
3 T Vegetable Oil
1 C Finely chopped onion
¼ tsp Cayenne pepper
2 C half and half
½ tsp salt
1 T chopped chives (for garnish)
4 C corn kernels
2 tsp minced garlic
½ tsp salt
4 large eggs
2 C Grated sharp white cheddar cheese

Butter a 2quart oven to table baking dish.

In a large heavy skillet over medium heat, sauté bacon until golden and crisp. Remove and drain. Cool, then coarsely chop, reserving for later. Discard drippings.

Add vegetable oil to same skillet. When hot, add onion and sauté for 2 minutes. Add corn, lightly brown (about 8 minutes). Add garlic and sauté for 1 minute. Remove from heat. Stir in cayenne pepper and salt. Set aside.

In a large bowl, whisk eggs and half and half until blended. Stir in corn mixture, reserved bacon and all but ½ cup of the cheese. Mix well. Transfer to baking dish. Sprinkle remaining cheese over top.

Bake 45 minutes at 350 degrees until knife comes out clean/dry. Top should be slightly brown and crisp. Remove and cool for 5 minutes. Sprinkle with chives and serve warm.
