1/2 c minced onion
1 1/2 tbs butter
1 1/2 tbs oil
1/2 c dry white wine
4 ripe tomatoes, peeled, seeded and chopped
1 garlic clove, minced
1/4 tsp oregano
4 oz feta cheese
1 lb raw shrimp
1/4 c chopped parsley

Directions:
Directions:
In a heavy skillet, saute onion in butter and oil until soft. Add wine, tomatoes, garlic, salt, pepper and oregano. Bring to boil and lower heat briefly until sauce is slightly thickened.

Stir in cheese and simmer for 10 - 15 minutes. Adjust seasoning. Just before serving, add shrimp and cook 5 minutes until shrimp are just tender. Garnish with parsley.
