2 tbsp butter
2 c rhubarb
1 c sugar
1/4 c sugar
2 egg yolks, beaten
1 c light cream
2 tbsp corn starch
1/8 tsp salt
1 baked pie shell

Directions:
Directions:
Melt butter. Add rhubarb and 1 c sugar. Cook till tender, Stirring constantly on med-low heat. Careful not to scorch.
Combine 1/4 c sugar, egg yolks, cream, corn starch, and salt. Add to rhubarb mix and cook on low till thick, stirring constantly. Pout into baked pie shell. Top with meringue. Bake at 350º for 12 to 15 min.
