12oz semisweet chocolate
5 T espresso or strong coffee
1 C butter
2 C sugar
6 egg yolks
1 C flour
6 egg whites

Directions:
Directions:
Preheat oven to 350°. Grease & flour a 9” Springform pan. Melt semisweet chocolate and coffee in double boiler or microwave. Cream butter and sugar. Add egg yolks on at a time to creamed mixture. Add flour. Beat whites until stiff. Mix the chocolate into the egg whites & fold into butter mixture. Pour into prepared pan. Bake 60-70 minutes. When done, top will be crusty & cracked, and the middle will still be slightly moist.

Glaze:
4oz semisweet chocolate
2 T butter, melted

Melt chocolate in top of double boiler or in microwave. Whisk in the melted butter. Pour the glaze on top of the cooled cake & smooth top if necessary. Sift confectioners’ sugar over top if desired.
