Bean and Corn Salad Recipe

1/3 C lime juice
1/2 C olive oil
1 clove garlic - crushed
1 tsp salt
1/8 tsp ground cayenne pepper
2 cans (15oz each) Black Beans, rinsed & drained
1 1/2 C frozen corn kernels
2 avocados, diced
1 red bell pepper, chopped
2 tomatoes, chopped
6 green onions, chopped
1/2 C fresh cilantro, chopped

Place lime juice, olive oil, salt, garlic and cayenne pepper in small jar. Cover & shake until well mixed (or put in bowl and whisk together).

Add rest in med-large bowl. Pour dressing over and mix.

Serve as salad or with 'Scoops' style tortilla chips. Can be made ahead.
