1 lb. Colby or mild cheddar cheese
1 small jar diced pimentos, drained
1 cup (or more to taste) mayonnaise

Directions:
Directions:
Finely shred cheese. Mix cheese, pimento and mayonnaise in a large bowl. Great for sandwiches or as a cracker spread.

The traditional Southern way to serve this is on white bread with the crusts cut off.
