8 Tbsp butter, softened
1 Tbsp sugar
1 egg yolk
1 cup flour
1/4 tsp salt
1/2 tsp vanilla


2 cups fresh, diced rhubarb
2 Tbsp butter
4 Tbsp flour
1 1/2 cups sugar
2 eggs, beaten
1 cup heavy cream

Mix together all crust ingredients and pat into 9-inch square baking pan. Spread diced rhubarb over crust.
Combine all remaining filling ingredients and pour over rhubarb. Bake at 350 for 1 hour or until set.
