2 c flour
1/2 tsp. salt
12 oz. beer
3 egg whites, beaten until soft peaks form
Oil (about 1 pint)

Directions:
Directions:
In bowl, combine flour, salt and beer; mix well (will be fairly firm).
Stir in beaten egg whites - first a small amount to lighten the mixture, then the remainder, folding lightly but thoroughly to combine.
In deep pan heat oil (enough to cover bottom) to 375º
Dip vegetables one at a time into batter then deep fry in oil until puffed and golden .
Any extra can be kept for 2 to 3 days.
