7 c cubed red potatoes
1/3 c chopped onion
2 T flour
1 envelope (1 oz) ranch dressing mix
1/2 tsp dried parsley
1/4 c reduced fat sour cream
2 c fat free milk

Directions:
Directions:
Place potatoes in 1 inch of water in a large nonstick skillet. bring to a boil. Reduce heat. Cover and simmer for 10 minutes or until tender. Drain. Coat skillet with pam; add potatoes and onion. Cook over med high for 5-7 minutes for until golden brown. In saucepan, combine flour, salad dressing mix, parsley and salt. Stir in sour cream. Gradually add the milk, stirring until blended. Bring to a boil. Cook and stir for 2 minutes for until thickened pour over potatoes. Toss to coat.
