4 lbs. Potatoes, peeled and cubed
1 large Bermuda (red)onion, chopped
1 lb. Peppered bacon, cut into 1 inch pieces
2 cups cheddar cheese, grated
1 pint (16 oz.)sour cream
1 tsp. garlic salt


Directions:
Directions:
Brown bacon in the dutch oven. Add onion, cook until tender. Don't drain the bacon grease. Add potatoes and stir. Cook until potatoes are tender (depending on heat of dutch oven it's about 20 – 30 minutes). Stir once while cooking; be careful not to mash the potatoes. Layer sour cream on top, then cheese. Don't stir. Place lid on dutch oven and cook long enough to melt the cheese (about 5 minutes).
