1 cup sugar
1/4 cup corn starch
3 cups whole milk, divided
1 T. butter
2 t. of vanilla

Preparation Time: 1 hour

Pudding: In a small bowl, mix eggs and sugar. In a measuring cup mix cornstarch and 1 cup of milk. Stir to combine and set aside. In double boiler, scald 2 cups of milk. Add cornstarch mixture and egg mixture to scalded milk. Continue cooking over heat and stir constantly until pudding thickens. After thickened, add butter and vanilla and stir. Cool. Dish into pudding cups, top with fresh fruit and whipped cream.
Banana Cream Pie: Bake a single pie crust. Cool. Slice 3-4 bananas into pie crust. Top with pudding. Refrigerate.
Coconut Cream Pie: Bake a single pie crust. Cool. Mix 1 cup of packed coconut into pudding and pour into pie crust.
Cream puffs or éclairs: Make "Puffs" recipe and fill with pudding.
