6 boneless, skinless chicken breasts
1/2 c balsamic vinegar
3T olive oil
2 t kosher salt
1 1/2 coarse black pepper
2 t mixed herbs (herbs de Provence)
4 oz blue cheese cit into six slices

Directions:
Directions:
Place chicken in ziplock bag. Add to bag vinegar, oil, almost all of the salt and pepper. Shake to coat chicken and refrigerate to marinate for 2 hours.
Prepare grill.
Arrange chicken on medium-hot grill and sprinkle herbs de Provence and remainder of salt and pepper on grilling chicken. Grill approx. 6 minutes per side. Transfer to plates and place cheese on top of each piece.
