1 1/2 tbs grapeseed oil...or whatever
3 shallots peeled and diced
2 cloves garlic, finely diced
2 jalapeno, seeded and diced
1 tbs chili powder
1tsp cumin
1 tsp ground coriander
1 tsp dried oregano
1/2 tsp cayenne
1 cup turkey roasting pan juice
1 cup veal demi-glace....or chicken broth will work
1/2 cup toasted pecans
Salt to taste

Directions:
Heat oil in medium saucepan over medium heat. Add shallots, garlic and jalapenos. Saute for 2 mins. Add spices and saute for another couple of mins. Add turkey pan juice and demi-glace or stock. Bring to boil. Lower heat and simmer for about 20 mins. Stir in pecans and season with salt and lemon juice. Yummy.
