3 c. cooked, mashed sweet potatoes
2 eggs beaten
1/2 t. salt
1/3 stick butter, melted
1 c. sugar
1/2 c. milk
1 T. vanilla

Topping:
1 c. brown sugar
1 c. walnuts rolled in 1/3 c. flour
1/3 stick butter, melted

Directions:
Directions:
Use sweet potatoes rather than Yams. Combine all ingredients for souffle and pour into a greased casserole dish. Combine topping ingredients and spread onto casserole. Bake at 350 for 25 to 35 mins.
