Ingredients: 2 1/4 cups Whole Wheat Flour (Organic Heartland Mill Flour is my favorite) 2 1/4 cups All Purpose Flour (Organic Heartland Mill) 2 tsp baking soda 2 tsp salt 2 cups butter ( 4 sticks) softened --> I always use butter, margarine really is not a healthier choice --> remember it is one molecule away from plastic. 1 1/2 cups granulated sugar 1 1/2 cups brown sugar 1 tbsp vanilla (mexican vanilla gives the best flavor) 4 large eggs 3 cups semi-sweet chocolate morsels 1 cup oatmeal 1 cup coconut

Directions:Preheat oven to 375º
COMBINE: flours, baking soda and salt - set aside.
BEAT: butter, sugars, and vanilla together in a large bowl ~ until creamy. Add eggs, beat well. Gradually beat in flour mixture. Add oatmeal and coconut. Stir in chocolate chips. Drop by rounded tablespoon onto greased baking sheet. BAKE for 8 to 10 minutes (at 375 degrees), until golden brown. |
