6 - 8 medium potatoes
6 pieces fried fatback or 2 to 3 T. of fatback grease
4 T. self-rising flour
1 c. water
Salt and pepper to taste

Directions:
Peel, wash and cut potatoes into bite size. Put potatoes in 5 qt. pot; add water, salt, pepper and grease. Cook on medium heat until tender. (While cooking make thickening by mixing flour and water and beat with spoon until there are no lumps.) When potatoes are tender, reduce heat, add thickening slowly, simmer until potatoes are thicken.
