1 12 oz jar roasted red peppers (drained and diced)
1 med onion (diced)
3/4 cup sour cream
1 package dry ranch dressing mix
1 tbsp olive oil

Directions:
Directions:
Saute onions in olive oil over medium heat until tender. Add red peppers and cook until the peppers are just heated through. Remove from heat and add sour cream and dressing mix. Put the mixture into a food processor and process until smooth.
You can make ahead and just reheat. Great on chicken, pork, fish or pasta. I even serve it cold as a dip.
