2 Cups flour
2 tsp. Baking soda
tsp. salt
2 tsp. Cinnamon
1 cups sugar
cups of flaked coconut
cup raisins
cup chopped pecans
1 Cup vegetable oil
3 eggs, slightly beaten
tsp. vanilla extra

Directions:
Directions:
Combine flour, baking soda, salt, and cinnamon in a large bowl. Stir in sugar add coconut, raisins, and pecans. Stir well make a well in center of mixture combine oil, eggs, and vanilla, add to dry ingredients, stirring just until moistened spoon batter into greased muffin pans filling full. Bake at 375 for 18 20 minutes or until golden brown. Yield 2 dozen.
