1/4 c. olive oil
2 medium onions sliced
2 cloves of garlic, chopped
4 chicken breasts cut up into large chunks

Sauce:
2 c. (or 1 lb. can) of tomatoes
1 can tomato sauce (1 c.)
1 tsp. salt
1-2 bay leaves
1/4 tsp. pepper
1/4 c. red cooking wine (preferably from the Schlosser Vineyard:)
1/2 tsp. celery seed
1 tsp. oregano and basil

Directions:
Directions:
Brown chicken in oil and only turn once. Remove and add the onion and garlic. Cook until brown. In a separate pan, combine all sauce ingredients (except for the wine) and heat. Add chicken back into the original pan and pour the sauce over it. Simmer covered for 45 minutes and then add the wine. Cook another 20 minutes uncovered. Serve over penne, rice, or spaghetti.
