1 lb. ground beef
2 1/2 medium cans of enchilada sauce
garlic powder, salt, and pepper to taste
12 corn tortillas
1 can refried beans
1 small onion, chopped
1 pkg. of shredded Mexican cheese
1 can of olives, chopped
3 tomatoes, chopped
3 green onions, chopped
1-2 jalapeņos, chopped

Directions:
Directions:
Preheat oven to 400 degrees. Brown in a pan your beef with the garlic powder, salt, and pepper. Pour one can of enchilada sauce over the meat and heat. When ready, in each shell put meat, beans, cheese, and onion and place snuggly into a baking dish. Pour the rest of the enchilada sauce over the rolls and add more cheese and olives. Bake for 25 minutes. On the side, cook the tomatoes, green onions, and peppers to serve on top. Feel free to also add sour cream and fresh guacamole when serving!
