2 lbs zucchini or yellow squash
2 lbs ground beef
1 T oil
2 C bread crumbs
1 envelope spaghetti sauce mix
2 beaten eggs
1 medium onion diced
2 T chopped pimento or peppers
1/2 C shredded cheddar cheese
1/2 C spaghetti sauce

Directions:
Directions:
Cut squash in half, depending on size, cook in salted water 3 - 5 minutes. Brown ground beef - drain off fat. Combine with other ingredients - except cheese. Spoon into greased 2 qt casserole. Top with cheese and bake 350 - 30 - 45 min. until brown and warm through.
