flour tortillas
refried beans
leftover meat (shredded beef, pork, chicken or taco seasoned ground beef or turkey)
salsa
cheddar or Monterey Jack cheese
sour cream

Directions:
Directions:
Spray one side of tortilla with nonstick cooking spray. On other side of tortilla, spread refried beans, meat, cheese and/or salsa thinly to within 1/2-inch of sides. Place tortilla in skillet on medium-high heat topping side up. Place another tortilla on top and spray top of second tortilla with nonstick cooking spray. Cook until bottom tortilla is browned and crispy and then flip using large spatula. Cook until second side is browned and crispy. Remove from pan and cut into wedges with pizza cutter. Serve hot with sour cream and more salsa.

I always keep tortillas on hand so I can disguise leftovers using this recipe. The kids love these with just refried beans and cheese. Can also use black beans, diced fresh tomatoes, corn, avocado or whatever suits your taste.
