1 trimmed Brisket (5 lbs.)
2 tsp. meat Tenderizer
1 bottle Liquid Smoke (4oz)
1 tsp. Celery Salt
1 tsp. Paprika
1/4 tsp. Nutmeg
1/4 tsp. Garlic Powder
1 tsp. Onion salt
1 tbsp. Brown Sugar

Sprinkle the tenderizer, cover with liquid smoke, cover with foil and refrigerate over night. Next Day sprinkle with mixture of the rest of the ingredients. Cover tightly, fat side up, with foil. Bake 2 hours at 250 F. Loosen the foil and bake 5 hours more. Set aside for one hour. Strain the juices to remove the fat or remove easily in the freezer. Serve hot with brisket or Bar B Q Sauce.
