2 oranges
9 cups diced pears
2 cups crushed pineapple - drained
sugar
4 T. lemon juice
1 box lemon gelatin or orange if you want a deeper amber color

Directions:
Wash and remove peel from oranges. Add 1 qt of water to peel and boil 5 mins. Drain and discard water. Repeat boiling another 5 mins. Grind peel and oranges together. Wash, peel and core pears; cut into small pieces. Combine oranges, pears and pineapple; measure. Add half as much sugar as the fruit mixture. Add lemon juice and mix thoroughly. Bring to a boil over med-hi heat and cook for about 40 mins. until mixture is almost thick. Add gelatin and cook 1 min. longer. Pour into sterilized jars, leaving 1/2 inch head space. Adjust lids and process 10 mins in a water bath canner.
