2 t Oil
1 small onion, chopped or minced
1/2 c roasted red pepper, chopped or minced
1/2 green bell pepper, chopped or minced
2 cloves of garlic, minced
2 cans (15-16 ounces each) black beans, rinsed & drained
2 T White Vinegar
few dashes Tabasco sauce
3 c cooked white or brown rice
1 T Oregano
Salt & Pepper

Directions:
Directions:
Heat oil in a large frying pan, saute' onion, red & green peppers & garlic until softened. Add black beans, vinegar & tabasco. Bring to a boil, reduce heat to low, cover & simmer for 5 mins. Stir in cooked rice, oregano, salt & pepper. Heat through & serve. Enjoy
