1 3/4 cup sifted all purpose flour
2 1/4 tsp. baking powder
1/2 tsp. salt
1/3 cup shortening
2/3 cup sugar
3/4 tsp. grated lemon rind
1-2 beaten eggs
1 - 1 1/4 cups ripe banana pulp

Directions:
Directions:
1. Sift together the dry ingredients.
2. Blend until creamy the shortening, sugar and grated lemon peel.
3. Beat in the beaten eggs and banana pulp

4. Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition until smooth.
5. You can add 1/2 cup broken nuts if desired.
6. Pour into greased loaf pan and bake in a 350º oven for an hour or until done.

Fold in nuts if desired.

Don't slice the loaf until it is cooled otherwise it will crumble.
