1 large onion
2 (16 oz.) can black beans
3 cloves garlic, finely minced
1/2 c. fresh orange juice
1 tbsp. olive oil
1/2 c. fresh mint leaves, shredded
1 tsp. cumin

Directions:
Directions:
Heat the oil and saute' the onion and garlic until soft being careful not to brown. Add the cumin and stir for a minute or two, until fragrant. Remove from the heat and cool. Rinse and drain the beans. Stir the onion, garlic mixture then add the mint and orange juice. Toss well. Let stand at room temperature about an hour or refrigerate for 3-4 hours but remove to come to room temperature before serving.
