1 cup Sugar
3/4 cup oil
3 eggs
1 tsp vanilla
3 cups flour (need more for rolling)
1 tsp Baking Power
1 jar jelly ( I use apricot)

Directions:
Directions:
Mix wet ingredients together, slowly add to dry ingredients. May need to add more flour in order to roll dough. Roll dough out, cover with jelly, roll in long jelly roll. Put on cookie sheet with seam down. Bake at 350º for appx 25-30 minutes or until bottom is brown. Remove and cut in slices. Return to oven to toast appx. 8-10 min.
You can use any kind of jelly. Also you can use chocolate chips or raisins mixed into the dough and rolled in long length and bake per above instructions (good variation)

You may cook these cookies longer to make them crispier or less to keep them soft. They may also be put in the freezer for later use.
