12 eggs
1 medium onion, chopped
1 medium green pepper, chopped
6 oz mushrooms, sliced
8 oz shredded cheddar cheese, divided in half
1 pkg thickly sliced ham, diced
3 medium potatoes (raw), diced
1 T. oil
2 oz. milk

Directions:
Directions:
Heat the oil in a frying pan. Add the potatoes and onions and fry until tender. As these are finishing, add the green peppers, mushrooms and ham to the pan, stir and allow to cook.
Meanwhile, break the eggs into a bowl, add the milk and beat the mixture. Pour into the frying pan with the potato and ham mixture and stir. Sprinkle with one half of the cheese. Let bubble until egg mixture is the desired firmness and flip. Cook until the desired consistency is reached. Sprinkle with the remaining cheese and serve. Serves 6
