2-1/2 c. flour
2 c. sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. oil
2 c. grated zucchini
1-1/2 tsp. cinnamon
1 tsp. salt
4 eggs
1/2 c. chopped nuts (optional)

Frosting:
1 - 3oz pkg cream cheese (softened)
1/4 c. butter (softened)
1 T. milk
1 tsp. vanilla
2 c. powdered sugar

In a small bowl, beat cream cheese, butter, milk & vanilla until smooth. Add powdered sugar & mix well. Frost cooled cake & store in refrigerator.

In a mixing bowl combine dry ingredients. In a separate bowl, combine eggs & oil. Add to dry ingredients. Mix well, then add zucchini, stir until blended. Stir in nuts. Pour into a greased 9 x 13 cake pan. Bake at 350º for 35 to 40 minutes. Cool.
