Ingredients: 2 zucchini (8-9 inches each) 1/3 cup chopped scallions or shallots 1 clove garlic, minced 2 cups finely chopped mushrooms ½ pound extra-lean ground beef or ground turkey breast ¾ cup 1% fat cottage cheese 1 tablespoon grated Parmesan cheese 1 teaspoon dried basil 1 teaspoon dried oregano Generous grating black pepper 1/3 cup grated part-skim mozzarella cheese

Directions:Preheat broiler. Pierce whole zucchini several times and cook in the microwave for 4-7 minutes on high. Or steam them whole for about 10 minutes on medium-high heat. (Zucchini should still be somewhat firm.) Set aside. Coat a large skillet with non-stick cooking spray. Over medium-high heat, brown scallions or shallots, garlic, mushrooms, and meat. While meat mixture is cooking, make “boats” out of the zucchini by cutting them in half lengthwise and scooping out the soft centers into a small bowl. (Be sure to leave some of the zucchini flesh next to the skin so that they are sturdy enough for stuffing!) Drain and gently squeeze liquid from the zucchini insides. Add drained zucchini to meat mixture. Simmer until liquid evaporates. Add cottage cheese, Parmesan cheese, basil, oregano, and pepper to meat mixture and stir until cheese is melted. Stuff zucchini boats with meat-cheese mixture. (Use a slotted spoon so that any extra juice drips off.) Evenly distribute mozzarella cheese over tops of boats. Place under broiler until cheese is melted and lightly browned (1-2 minutes). (You can also bake these for 20-25 minutes at 350 degrees if you want the zucchini softer.) |

Note: Zucchini boats can be made ahead and refrigerated. (Reserve mozzarella.) Preheat oven to 350 degrees, cover boats lightly with foil and back for 30-40 minutes or until centers are piping hot. Remove from oven and preheat broiler. Remove foil, add mozzarella cheese, then broil boats for 5 minutes or until lightly browned.
