4 eggs 3 c. sugar 1 c. oil 1/3 c. water 2 c. mashed sweet potatoes 3 1/2 c. sifted Bisquick 2 t. soda 1 1/2 t. salt 1 t. cinnamon 1 c. chopped nuts (optional) dash nutmeg (optional)
Beat eggs gently with sugar. Add water, oil and sweet potatoes. Stir well. Sift flour with spices then add to mixture. Mix well. Stir in nuts. Grease and flour muffin pan. Fill and bake until done. The muffins freeze well and you can also use pumpkin instead of sweet potatoes.
