1 lb orange roughy fillets
1/2 cup milk
1/4 tsp salt
1/3 cup flour
1 1/2 Tbl olive oil
1 Tbl minced garlic
3 Tbl fresh lime juice
2 Tbl lemon juice
1 Tbl orange juice
1 Tbl parsley flakes
2 Tbl thinly sliced green onion
1 Tbl butter

Directions:
Directions:
1. Soak fish in milk for 10 min. Remove, sprinkle with salt and dredge in flour
2. heat 2 Tbl oil in skillet and fry over med/high heat. Cook fish until golden brown.( about 3 min each side)..remove from pan. Put on serving dish, cover to keep warm. Wipe out pan.
3.Reduce heat and add remaining oil and carefully cook garlic (do not brown)...Add juices, parsley and onions. Ad butter, swirl in skillet until just creamy. Pour over fish and serve.

My favorite fish dish....very easy and very healthy and delicious. I usually serve with rice and side veggie.
