1 Can (12 oz) Beer
1 whole chicken (about 4 lbs)
2 Tbsp Barbecue Chicken Rub

2 cups wood chips

1. Soak wood chips in 1/2 can of beer and enough water to cover for 1 hour. Drain. Place in a packet made with double thickness of foil. Cut several slits into top of packet.

2. Place foil packet beneath grill rack. Prepare grill for indirect grilling and preheat on high until wood chips begin to smoke. Reduce heat to medium.

3. Rinse and clean chicken. Blot with paper towel. Sprinkle 2 tsp of rub inside the body and neck cavities of the chicken. Rub the bird all over on the outside with 2 tsp of the rub.

4. Using a can opener, make a few more holes in the top of the beer can. Spoon 2 tsp rub through the holes into the remaining beer in the beer can. Insert the beer can into the body cavity of the chicken and spread out the legs to form a sort of tripod. Tuck the wing tips behind the chicken's back.

5. Stand the chicken up in the center of the hot grill away from the heat. Cover the grill and cook the chicken until the skin is a dark golden brown and very crisp and the meat is cooked through (about 180º), 1 1/4 to 1 1/2 hours.

6. Using tongs, carefully transfer the chicken in its upright position on the beer can to a platter and let rest 5 minutes. Carefully remove the chicken from the beer can. Quarter or carve the chicken an serve.
