6 eggs
2 to 3 baking potatoes
white cheese - like jack, pepper jack etc. (shredded)
Butter and/or oil
refried beans
flour tortillas
Salsa
Directions:
Directions:
Peel and dice potatoes, cook in oil until browned. Drain off excess oil, and add a small pat of butter to pan. Beat eggs, and add to potatoes, cook and stir until eggs are scrambled. Sprinkle with cheese, cover just until cheese is melted Serve with hot flour tortillas, heated refried beans and salsa. I make breakfast burritos out of this. You can serve bacon or other breakfast meat on the side if you like. Also, can use cheddar, but jack or other types of white cheese seems to work better.
