2 c. chopped zucchini
1 large tomato chopped
1 medium onion chopped
1 c. low fat Bisquick
2 c. low fat shredded cheddar cheese
1 egg
1 c. low fat milk
salt & pepper to taste

Directions:
Directions:
Preheat oven to 400. Place cut up vegetables in a 9x13 pan sprayed with non-stick spray. Add salt and pepper and sprinkle cheese on top. Blend together Bisquick, milk and egg and pour over vegetables. Bake 35 to 45 minutes until top is lightly browned.
