5 lbs potatoes
12 slices bacon
12 or more leeks or green onions
1/2 C yellow onions
1/4 C flour
8 C beef or chicken broth
4 egg yolks
2 C sour cream
2 T minced parsley
2 teaspoons chervil

Directions:
Directions:
Pare and cube potatoes. Cut bacon slices into small, even squares. Saute bacon crisp. Chop leeks or green onions and yellow onions and add to bacon and drippings. Stir flour into skillet and cook until thickened. Slowly stir in broth. Add cube potatoes and cook until potatoes are still firm, not mushy.
Combine sour cream and egg yolks. Add a little of the soup mixture to the sour cream and yolk mixture and then add all to the soup pot. Otherwise , the sour cream will curdle.
Add parsley and chervil 5 minutes before serving.
Yields 4 quarts. If the soup is made in advance, add the sour cream and egg yolks when the soup is heated before serving.
