1 c. sifted flour
1/4 t. salt
2 eggs, well beaten
7/8 c. milk
1 T. melted butter

Preheat oven at 450º. Grease 8 muffin pan cups. Sift flour and salt together. Combine eggs, milk and cooled butter. Gradually add milk mixture to flour, beating with an electric mixer for about 1 minute, or until batter is smooth (with a thickness of heavy cream). Fill cups 1/3 full. Bake 20 minutes then reduce heat to 350º; continue baking 15-20 minutes. Remove from cups at once. Serve piping hot.
