4 cups cooked finely chopped chicken ( boil in a few drops of hot sauce & garlic)
1 cup onion chopped
1/4 cup flour
2 1/2 cup water
4 chicken bouillon cubes
1 pkg chi Chi's Seasoning Mix (not the red stuff)
8 oz. Sour Cream (room temp)
4 oz can green chilies, drained
1 tsp Cumin
10 (8inch) flour tortillas

Directions:
Directions:
In medium saucepan cook onion in butter till tender. Stir in flour until paste-like. Stir in water slowly, bouillon cubes & season mix. Stir until mixture thickens & cubes dissolve. Remove from heat. Add sour cream slowly, In large bowl mix chicken, 2 cups sauce and 1 cup cheese. Stir in 1/2 of the can of chilies and cumin. Put equal amounts of mixture in each tortilla and roll up. Place in greased 9 x 13 pan seam side down. Top with remaining sauce, cheese and chilies. Cover and bake at 350 for 25 minutes or until hot.

These are the best Enchiladas we've ever had. I think its the Chi Chi's Seasoning Mix.
