2 Ciabatta Sandwich Rolls (can substitute any LaBrea or artisan rolls)
8 thin slices (applewood smoked) bacon
8 thin slices roasted turkey (about 4 ounces)
4 large tomato slices
1/2 Avocado, pitted, peeled and sliced
Romaine Lettuce Leaves

For the Arugula Mayonnaise:
1/2 c. mayonnaise
3 bunches arugula leaves
1/3 c. coarsely chopped arugula leaves
1 T. minced shallots
1 T. chopped fresh parsley
1/2 t. grated lemon peel
1 T. freshly grated Parmesan cheese
Kosher salt to taste
Freshly cracked black pepper, to taste
In a small bowl, combine the mayonnaise, chopped arugula, shallots, parsley, lemon peel and grated Parmesan cheese. Season with kosher salt and cracked pepper.

Cook the bacon until crisp. Transfer the bacon to paper towels and drain. Slice the rolls in half and lightly toast, if desired. Spread the arugula mayonnaise mixture evenly on both halves of the roll. Place the turkey, tomato, avocado slices and bacon on one half or the roll. Season with salt and pepper. Pile on the lettuce and cover with the other half of the roll.
