"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali
6 medium potatoes 2 cups shredded American cheese 1/4 c butter 1/3 c chopped green onions salt and pepper to taste 2 tbs butter 2 c sour cream
Boil potatoes in peel, about 15 mins (do not overcook). Cool, peel, grate coarsely. Melt 1/4 c butter. Add cheese, butter, onion, sour cream, and salt/pepper. Put in greased casserole dish. Dot with 2 tbs butter. Bake 350 for 25 mins.
This recipe came from my great-aunt Jo Womack. She served this to us when we went to Birmingham for her daughter Mary Jane's wedding. It has been a favorite holiday recipe ever since.
