1 lb. Vermont extra sharp white cheddar cheese, grated
1 lb. New York yellow sharp cheddar cheese, grated
2 tsp. finely minced onion (almost ground)
1/2 tsp. cayenne pepper
1 tsp. Worcestershire sauce
1 1/2 cups mayonnaise
6 oz. chopped roasted red peppers (or pimentos)

Mix thoroughly and refrigerate immediately. Great in sandwiches or served on Triscuits. (Note: Use the best quality cheese you can find. We like the Cabot Vermont white Cheddar.)
