1/2 c. packed brown sugar
1/2 c. granulated sugar
1/2 c. vegetable shortening
1/8 c. water
1 egg
1 tsp. vanilla
1/3 c. honey
1/2 c. applesauce
3 c. old fashioned oatmeal
1 c. all purpose flour
1/2 tsp. baking soda

Preheat oven to 350. Lightly grease cookie sheets. Beat sugars and shortening until creamy. Add honey, applesauce, vanilla, water and egg. Beat well. Combine oats, flour, baking soda and 1 tsp. salt, if desired. Add dry to shortening mixture, mix well. Drop by rounded tablespoons onto cookie sheet and bake 12 mn utes or until a light golden brown. Let stand 1 minute before removing to cooling rack.
Add chocolate chips, raisins, cinnamon, nutmeg, nuts or coconut to taste.
